How to cook khabeesa
Making Khabeesa
Emirati traditional cuisine is a mixture of lots of Middle Eastern and
Asian cuisines. Such as; Magloba and biryani. We all in the UAE knows that biryani
rice comes from India, but now we all in the UAE consider biryani as
traditional UAE rice.
People in UAE takes a lot of food idea from neighbor countries, but they
do not copy and paste the idea; they take the idea and develop it to better
ideas.
One of my favorite traditional UAE’s sweet is Khabeesa, we take the
khabeesa from Oman long time ago and we add more ingredients on it; like rose
water and nuts.
Making khabeesa is very simple it just contains a several ingredients
which is; plain flour, water,
saffron ground cardamom, rose water, butter,
desiccated coconut. Making khabeesa could be easy following the recipe bellow::
1. Add flour in medium saucepan placed over
medium heat. add the flour and stir continuously until it become golden brown.
Remove from heat and sift the flour.
2. Add saffron, water, rose water, cardamom,
sugar, desiccated coconut and little bit of butter to a large saucepan. leave
the ingredients to boil.
3. Add the toasted flour that we make it in
number one gradually to the water while stirring continuously.
4. Add butter
and stir the ingredients very well, cover and cook on very low heat for no less
then 30 minutes. Remove the heat and let it cool.
5. Put Sweetened Condensed Milk and move the
recipe until it well combined.
6. Served with room temperature with Arabic coffee.
There is different way to make khabeesa, different people have different touches but this is the most common way to make khabeesa. At the end, I think people who visit
UAE shouldn’t leave without testing this amazing traditional sweet.
